My Adventures in Cooking : Lemonade Chicken

My cooking skills are limited to Tuna Helper and grilled cheese.
My wonderful husband is the official cook of the house and he is fabulous.
I wouldn't dare compete with him.
But, I like cooking I just don't have much practice doing it.
So, I've challenged myself to cook more.
Heating a can of soup doesn't count.
Something with ingredients.

For this first adventure I made Lemonade Chicken. My husband bought a new crock pot and I was interested in using it. It's a lot bigger than our old one and a lot easier to clean. The idea of using a crock pot is very appealing to me. Just throw your ingredients in and walk away.
Anyway, here's the recipe via


6 (4 ounce) skinless, boneless chicken breast halves
3/4 cup lemonade concentrate
3 tablespoons ketchup
2 tablespoons brown sugar
1 tablespoon cider vinegar
2 tablespoons cornstarch
2 tablespoons cold water
  • Place chicken in a 5-qt. slow cooker.
  • Combine the lemonade, ketchup, brown sugar and vinegar; pour over chicken.
  • Cover and cook on low for 2-1/2 hours or until chicken juices run clear.
  • Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; stir into cooking juices.
  • Cover and cook on high for 30 minutes or until thickened.
  • Return chicken to the slow cooker; heat through.

I also made a salad with it with mozzarella cheese and cherry tomatoes and a yummy Italian dressing.

I was pretty pleased with the meals but I probably won't make it again because the kids hated it. It was pretty tart but refreshing.

  1. When I was a kid my favorite chicken was a dish called ritz chicken, I was out of one of those church fundraiser type cook books. Dip the chicken in mayo then in coarsely crumbled ritz crackers and bake. simple and yummy.
